1. What is a Cage Free Egg?
Our Sunrise Fresh brand of eggs are produced by 100% cage free hens who are fed a 100% vegetarian diet free of any animal by-products. They live in community hen houses where they are free to run, preen, perch and socialize. They lay their eggs in nests and have full access to water and feed at any time they choose.

2. What is an Organic Egg?
Our Go-Organic Eggs are certified 100% Organic by the Washington State Department of Agriculture in accordance with the USDA. Our Organic flocks are free roaming hens, which means they have the safety and security of a community hen house but are also free to run, preen, and socialize outdoors. We are inspected annually by the Washington State Department of Agriculture.

3. What is an Omega-3 Egg?
Our Go-Organic Omega-3 eggs are a special, value added egg that we produce especially for our customers that are looking for supplementing Omega-3 in their diets. Each of our Omega-3 eggs contains 250mg of Omega-3 (with a natural variance of up to 20%). We achieve this high level of Omega-3 by adding Organic Flax seed to our hens diets. Flax is naturally high in Omega-3 and enriches these eggs with the essential Omega-3, ALA, and vital Omega-3’s, EPA and DHA. These eggs are also enriched with Vitamin E. Research has shown Omega-3 to be essential in human sight, brain, and heart health.

4. What causes Blood Spots in Eggs?
Blood spots are NOT an indication of fertility, nor are they the sign of a “baby chick” developing in your egg. Blood spots are caused by the rupture of a blood vessel on the yolk surface during formation of the egg. Blood spots are found in less than 1% of all eggs. They are usually detected during the candling process, but can occasionally go undetected. If you do find a blood spot in your egg, the egg is still safe for consumption and the blood spot can be removed with a spoon or the tip of a knife.

5. What is the difference between a white egg and a brown egg?
The difference between a brown and white egg is the breed of the hen producing the egg. Simply put: Brown hens lay brown eggs and white hens lay white eggs. Nutritionally, these eggs are the same. Brown eggs are typically more expensive because brown hens are typically larger birds and consume larger quantities of feed.

7. Where are your eggs produced?
All of our Natural Cage Free and Organic Eggs are produced right here on our own family farm. Because we’re locally owned and operated, right here in the Pacific Northwest, our eggs typically make it from hen house to our customers in as little as 3 days! We pride ourselves in providing our customers with the freshest, best tasting eggs possible. By buying local, you’ll also be helping our environment by limiting the fuel used to transport products across the country. Many products (yes, even eggs) will travel over 1,500 miles before they reach the grocery store. Buying local means buying fresher!

8. What does the "Grade AA" on your carton mean?
With the exception of Jumbo’s, all of our eggs are Grade AA. Industry wide, Jumbo’s are never given a Grade AA. Eggs can be Grade AA, A, or B, with Grade AA being the superior grade. A Grade AA egg is a fresher, higher quality egg, with a smaller air cell. To produce Grade AA eggs, our eggs have to make it from hen house to customer in record time! Our AA Grade is just one more way you can tell you’re getting the freshest eggs possible when you buy our eggs.

9. What do you feed your hens?
The health and happiness of our hens is important to us. For that reason our hens will never be fed any hormones, antibiotics, harmful drugs, or animal by-products. Our hens feed is vegetarian. It is a mixture of the finest grains: corn, wheat, barley, and soy. Our special flock of Omega-3 hens are also fed flax seed. All of our Organic hens are fed 100% Organic feed, milled from the finest Organic grains in our own,on site, certified Organic Feed Mill.

How do duck eggs differ from chicken eggs?
Duck eggs are typically larger.
Duck egg shells are thicker.
Duck eggs have larger yolks and have a richer, heartier taste.
Fried duck eggs have a firmer texture.
When baking with duck eggs, you may find that they whip up higher and create loftier cakes. This is due to the high level of protein in the egg whites.
Our cattle have been born and raised on our farm for over 30 years. We do not use any antibiotics, steroids, growth hormones or animal by-products in the raising of our organic beef. The cattle for our organic beef is certified 100% organic by the Washington State Department of Agriculture and live freely on our farms’ certified organic pastures.

Our feed mill is certified 100% organic and is used solely to mill 100% organic feed for our certified organic hens. In 1949, Jan and Zelma Stiebrs immigrated to the United States from Latvia with their two small children, Anita and Jon. It was summer and their first job in this country was picking strawberries and beans in the Tumwater Valley. All the while they worked, they were dreaming of owning their own business. In 1953, with a big dream and 100 hens, they started selling eggs. Jon and his dad sold their farm fresh eggs door to door to neighbors and friends. They began calling on business in Tacoma, Washington and soon had enough business to keep the family going. In 1978, Jan and Zelma retired. Jon and Dianna, along with their three children, Kiasa, Yany, and Ania, now own and operate the family business. Their three grandchildren, Hailey, Abby, and Jacob are now adding the fourth generation’s help in the growing business.
Now, 52 years since we sold our first dozen eggs, about 70 people work for Stiebrs Farms. Seven of those are family members. We have employees who gather eggs by hand and care for the animals. We have a processing plant, where our employees package the eggs with the greatest of care and loyalty so that our customers receive only the best, freshest products. We do our own marketing and have five delivery trucks that go out everyday to Northern, Western and Southern Washington and Northern Oregon. We are proud to produce organic eggs, organic beef, and organic feed, all certified 100% Organic by the Washington State Department of Agriculture. We own and operate our own certified organic feed mill to maintain the integrity of our organic egg program.

Ania’s Quick Quiche | Mom’s Delicious Deviled Eggs | Howard Helmer’s Famous 40 Second Omelet
Ania’s Quick Quiche
4 farm fresh Stiebrs Farms eggs
1 cup half and half
½ cup mayonnaise
2 tablespoons flour
1/3 cup onions, diced
8 oz swiss, cheddar, gyuyere or goat cheese, grated or finely chopped
1 package frozen spinach, thawed
salt, pepper, garlic powder to taste
1 pie shell
Preheat oven to 350 degrees. Whip first four ingredients until well incorporated. Add the remaining ingredients. Pour into pieshell. Bake 45 minutes to 1 hour or until top is golden.
Optional add-ins: Chopped chicken breast, roasted bell peppers, broccoli and other veggies, ham . . . .or anything else you think would be delicious!!
Low carb option: Pour into greased glass bakeware without pie shell.

Mom’s Delicious Deviled Eggs
18 farm fresh Stiebrs Farms eggs
½ cup mayonnaise
1 tsp vinegar
1/8 cup mustard
Salt and pepper to taste
Paprika for garnish
Boil the eggs for 20 minutes and cool them quickly by soaking them in cold running water (even icy water works well). Once they’re cool to the touch, put the eggs into the refrigerator until completely cooled.
Once cooled, peel the eggs and cut the eggs in half. Lift out the yolk, being careful not to split the egg white, and put the yolks in a large bowl. Set the egg whites on a paper towel on a plate.
To the yolk add the salt and pepper, mayonnaise, vinegar and mustard. Mash everything with a fork. If it is too dry add a bit more mayo and mustard as needed for taste. ( and more vinegar if it needs it after adding more mayo)
Next, the fun part! Put the filling into a plastic ziplock storage bag, seal it and start mashing it until it is smooth. Snip one corner of of the ziplock bag and squeeze the filling into the egg white using a circular motion.
Finally, sprinkle some paprika on top. Cover your eggs with plastic wrap or put in a covered container. Place immediately into the refrigerator and store them there until ready to serve.
TIP: Not using fresh eggs, but using eggs that are about 2 weeks old, will make it easier to peel your hardboiled eggs. The freshest eggs can be almost impossible to peel nicely.

Howard Helmer’s Famous 40 Second Omelet
2 eggs
2 tablespoons water
1 tablespoon butter or 1 teaspoon oil
Whisk together eggs and water until blended. In a 10” omelet pan, heat butter until hot enough to sizzle a drop of water. Pour in egg mixture. Mixture should set immediately at edges. With an inverted pancake turner, carefully push cooked portions at edges toward the center so uncooked mixture can reach hot pan surface, tilting pan and moving as necessary. Continue until the egg is set and will not flow.
Fill one half of the omelet with ½ cup of desired fillings. With a pancake turner, fold the omelet in half. Invert onto plate and serve immediately.
